Baked Eggs


Oh, this is SO GOOD.

It was so good, I made it again 3 days later. I would've done it the day after but I felt the need to tease my craving a little more.

Creamy Pasta w/ Mushroom

I'm surprisingly enjoying my little adventures in the kitchen. 






What to do:
-Bring broth, cream, garlic and crushed dried pepper to boil. 
Reduce heat and let it simmer for about 20 minutes then remove it from the heat and add the parmesan.
-Saute mushrooms with butter until tender then remove from heat.
-Cook your pasta and add everything together. 
-add more parmesan before eating! :)

9 months old

ISABELLA IS 9 MONTHS OLD. wow.

When people tell you it goes by fast, they mean it. Everything is still as tough and as challenging as when it all began but that doesn't compare to the overwhelming awesome that is your child growing up before your eyes.

I love you, Isabella, my little blessing, I can't wait to have conversations with you, ones where we can understand each other. Stay amazing and slow down a little bit.

Huevos Rancheros

 Fry up the chorizo then add the refried beans.
Layer the beans with chorizo mix, cheese and egg on a flour tortilla and 
bake in a 400ยบ oven until egg is cooked.
 add avocado, salt and pepper and of course, ENJOY!
 For Isabella's meals, steam up all the veggies and puree! I wish it was that easy for all of our meals.

Yup, she loved it!
By the way, I'd like to thank my amazing aunt for the recipe. She made it with bacon but she suggested using chorizo. Just so you know, both work just fine.
